It seems like life has been moving at a fast pace since October, when our son was born. Every night I go to bed wishing there were more time in the day. Now that we're getting this whole new parenting thing down, it seems like I have a little extra time each day, so here I am! The intentions for this blog has been on my mind since the idea for it was conceived. Sure, it's been collecting dust for awhile, but I think I'm finally ready to start updating. I have plenty to share with everyone!
One of the hardest things about being a new parent (besides the lack of sleep! >.< ) is finding the time and energy to eat well. Even if you're not a new parent, it can still be difficult. In an upcoming post, I want to show everyone how I meal plan and I hope to use my new printer/scanner to show the whole process I go through and then give links to the recipes I use. This has been a project I've been wanting to start for a long time now! I hope that it can help inspire others to eat healthier and to start cooking more instead of relying on heavily processed foods. I just reread all of that. And whoa. Let me clarify - Josh and I do not always eat healthy and not all of the entries on our menu are healthy. We make an effort though and being well-informed about our food and maintaining a vegan lifestyle helps.
